We’ve caught wind about The Last Resort, Black Sheep Restaurant’s newest watering hole. Red Sugar

And the award for the quirkiest cocktails of the month goes to Red Sugar, Kerry Hotel’s garden rooftop bar. Its newly launched cocktail menu is inspired by the post-war era of Hong Kong, with each drink taking its cue from the eight most significant industries of the 60s, 70s and 80s. A Golden Age, for instance, represents fishery and agriculture, and is crafted with Sichuan green pepper infused gin (this pepper is a popular spice used to enhance seafood), lychee liqueur, tomato water and dried squid shreds. Meanwhile, the Young At Heart harks back to Hong Kong’s toy industry and comes topped with a strawberry belt candy foam. Our favourite, however, has to be the tongue-in-cheek My Wife Is (Always Right), which tells the tale of the long-standing pastry industry and the classic “lo por beng” or wife biscuit.

Each guest has recently made the list of Asia’s 50 Best Bars, so you know you’re in for a treat. First up is the team from The Pontiac (Thursday, 4 June to Sunday, 6 June), who will be serving up four signature cocktails including the Hobnail (made with rye whiskey, ginger, lemon, orange oil, Angostura Bitters and Averna Amaro). We’re always on the search for a good Happy Hour – and it’s even better if food is involved! That’s why we’re excited to indulge in the all new “Honjo Hours”, taking place every day from 6pm to 7pm. The special menu features a selection of its signature cocktails, including the fruity Sakura Blossom ($70) and sake-based Negroni #77 ($55). With warmer weather on the horizon this month, we’re dreaming of alfresco cocktails on the beach. Luckily, Ruam is offering us the next best thing with its new cocktail menu, to be enjoyed whilst relaxing on its spacious outdoor terrace, naturally. The Diplomat

The Diplomat is the latest bar to set up shop in Central’s H Code. Opened by mixologist, John Nugent, the new bar seeks to bridge the gap between pubs and speakeasies. The 18-seater space is decked out with custom chrome fittings. It will be well at home with other H Code drinking dens, including Tell Camellia and Saketen. The cocktail menu is set to be a winner, with popular tipples sure to include the 𝐈𝐫𝐢𝐬𝐡 𝐂𝐨𝐟𝐟𝐞𝐞, made with Jameson Irish Whiskey, Martell VSOP, Tensaito, Elephant Grounds Cold Brew and cold cream.

Taking its cue from the flavours and culture of Japan, Frank’s Library has a whole new drinks menu this month. Hidden inside popular drinking den, Foxglove, the speakeasy bar tells the story of fictional character Frank Minza’s travels; this time conveying his love for Japan. Available until mid-summer, don’t miss the easy drinking Impossible Highball ($150) made with Rotovap coconut milk and rum, Giffard peach liqueur, vanilla liqueur and 1724 tonic, the delicate Sakura Blossom ($160) with hibiscus-infused Baijiu, sous vide marshmallow, half & half, lemon juice, sugar syrup and maraschino liqueur, topped with a delicate layer of raspberry dust, and the Tradicion ($150), with Nikka from the barrel, Four Fox Sake, sous vide nori, rice horchata, yuzu, lime and saline, among other creative libations.

If you’re on the hunt for even more love-filled concoctions, Maximal Concepts’ favourites Limewood, Sip Song and Stockton will have you covered this Valentine’s weekend. If you’re down in Repulse Bay, try out Limewood’s Love Elixir ($100), made with Tried & True Vodka, lime, pomegranate, saffron, sparkling rosé, passionfruit and Lillet Espuma, or opt for Sip Song’s Thai Me Down ($80), with Widges Gin, elderflower, lemon juice, prosecco and strawberry. The hoppiness is a great match for amplifying the spiciness and creating an echo of flavours. I would recommend the Double WTF; it’s a double IPA so the bitterness level is very high and it is very hoppy.”

“I love pairing the Taiwanese Sausage with the Heavy Smoker Smoked Imperial Porter. Taiwanese sausages are very sweet and, because of the fats in the sausage, very juicy. This makes it a great match for the smoked beer. The smoked beer flavours evolve the sausage flavours into a smokey bacon-like flavour.
